Simple DIY – Brut Rosé Popsicles

Yaaaasss…. OMG. These turned out WAY better than I thought they would and they were WAY easier to make than I had imagined – win win! Since Rosé is now the drink of summer, I was being called to put it into popsicle form. However, I stopped dead in my tracks when I realized that Sofia Coppola just released a Brut Rosé… and oh is it delicious. If you know me, you know I cannot resist the bubbly. So I added a bit of lemonade and dash of Gin to embellish it’s light sweetness and truly make these frozen bubbly treats exceptional. Now I have a freezer full of them and you could too!
Bachelorette Party Must Have
Palm Springs. Vegas. Miami Beach. Wherever your fabulous bachelorette party is located, these easy-to-travel-with adult popsicles are an absolute must for your event! Quickly mix them up, freeze and enjoy!
SUPPLIES:
- Sofia Coppola Brut Rosé
- 8″ x 2″ Popsicle Bags (the ones from Amazon come with the funnel!)
- Lemonade, I used Blackberry, Strawberry, and Original
- Gin (optional)
- Measuring bowl and cup
Rosé-sicle Recipe:
Full Recipe:
– 1 Bottle Of Bubbly (there is roughly 4 cups per bottle)
– 2 Cups Lemonade
– 1/2 Cup Gin
– Makes 13 popsicles
Half Recipe:
– 2 Cups Bubbly
– 1 Cup Lemonade
– 1/4 Cup Gin
– Makes 6.5 popsicles
With this ratio of alcohol to juice, you can still really taste the alcohol, it freezes perfectly and it’s delicious. If you’d like to cut back, you can always mix the juice and bubbly evenly, or exclude the gin all together. Bartenders choice!
Combine Ingredients
Combine the three ingredients in a bowl, preferably one with a pouring spout. Here I only made a half batch because I wanted to use different flavors of lemonade.
Fill The Bags + Freeze
Using the funnel that comes with the disposable popsicle bags, fill each one to the fill, seal and freeze! If you have a freezer with metal rack type shelves, you can place the pops on a baking sheet to freeze “smoothly”. My new fridge has glass shelves and so I just laid them out evenly, by flavor of course!
Freezer-Friendly
If you don’t have a fabulous gal-pal trip ahead, you can always make up a batch of these cuties to keep in your freezer… especially for these hot summer months! Warm afternoon, tank top and a book in the shade – also calls for a Rosé-sicle!
